What is a Cajun?

Check out my Gumbo recipe. There are many Gumbo recipes to be found. Each with their own character. But few I've found spend any time on making the roux. The roux gives much of the character to Gumbo, and it's worth spending time making it. It gives Gumbo a flavor dependant on how dark you make it (not to mention a better color then the chicken and sea food stock). I love the aroma just after adding the vegetables to the roux for sauteing. My recipe takes no short cuts. I take 2 days to make it, because it's the only cooking I enjoy.
